Thai Cuisine

Thai cuisine comes out from Oriental cuisines of South-East Asia. Its widely accepted foods in the world with immense flavours & taste. Traditionally, Thailand has very open to foreign culture with use of herbs & ingredients such as Lemon grass, Kaffir lime, & bird-eye chillies, makes it scented, spicy, & acceptable to almost all the palates in the world. There is some features of this cuisine are, other than like other-Asian countries, its does not use chopsticks for eating, rather eaten by fork & spoons, second, Thai cuisines has lots of curries, which is different from Indian counterparts, each curries have unique tastes & flavorings combined with coconut milk, herbs, & sauces with rice. & Third, the main dish always rice & all dishes are used as accompaniments to it. Mexican Cuisine

Mexican food is no exception, it is widely believed that contemporary Mexican cuisine is completely different from what it used to be thousands of years ago. Mexico is the birthplace of the highly advanced Mayan & Aztec civilization in ancient times. However, Mayans are nomadic hunters & food gatherers & not growers. Traces of this influence can still be seen in Mexican cuisine. Mayan food included wild & game animals such as armadillos, monkeys, & iguana & over 200 species of insects, which were a rich source of proteins. In the modern world too, it is quite common to see certain insects being consumed by rural Mexicans, though not very popular outside the country.

Ancient Aztec food was roasted in fire or cooked in pots called cazuela, which was hung over the fire. Cooking methods such as deep frying & pan searing, were literally unknown. It is after the Spanish invasion in the sixteenth century process of making lard & suet transformed the cooking habits of Mexicans. Art of making cheese, sour cream, & breads constitute a sizable portion of modern Mexican cuisine. Some popular foods are quesadillas or nachos with cheese dips. This cuisine influenced b South American cuisine & North American cuisine. Mexican popularly known as Tex-Mex cuisine. Special ingredients from this region are squashes, eggplants, onions, garlic & tomatoes, & Portuguese helped grow peppers & chillies, such as habanero are ranked hottest chillies in the world. Mexico today is largely reflective of the Spanish influence & same as Spanish dishes on Mexican menu, however cuisine of the country traits from the Portuguese, French, Caribbean, & South American cuisines. Food items such as nachos with cheese & enchiladas.

Common ingredients used in these Mexican cuisines are Avocado, Chillies, Jicama (Mexican Potatoes), Epazote, Platanos, Frijoles, Tortilla, Corn, Nopales, Monterey jack Cheese, Achiote, & Tomatillo.

Special Mexican Dishes

  1. Refried Beans- Using red & black beans & seasoned with spiced chillies, cooks until mushy texture, it is eaten as accompaniment with Enchiladas, burritos etc.
  2. Guacamole- It’s a kind of dip or sauce made with crushing ripened avocadoes on molcajete, adding chopped tomatoes & onions, for flavour & colour & lime juice added to prevent guacamole from turning black on open air. It’s also famous in Spain as well.

  3. Fajita- Grilled meat served on bed of corn or flour tortilla, kind of stir-fried meat with onions & bell peppers, it is generally served along with salsa, sour cream, & guacamole.

  4. Salsa- Type of Mexican sauces, term derived from Sal means salty. Made with fresh pureed or chopped tomatoes, with herbs & seasonings.
  5. Pico de Gallo- Also known as salsa cruda, mixture of chopped onions, tomatoes, & cilantro. Served as accompanying dish, sprinkled over dish.
  6. Enchilada- Popular also on USA, made with stuffing of corn or flour tortillas with refried beans, cheese, meats etc. covered with chilli pepper & baked. Enchiladas eaten as snacks with rice & fried beans.

  7. Taco- Half moon corn tortilla shell, filled with salad, refried beans, grilled meats or sour cream & serve with salsa, pico de gallo or guacamole.

  8. Tostadas- Same as Tacos, shape of shell of tart, word comes from toasted & crunchy shells that do not get soggy easily.
  9. Burrito- Flour tortilla stuffed with kinds of fillings rolled up like roll, stuffed with rice, meat, lettuce, guacamole, & sour cream etc.
  10. Chimichangas- Deep-fried burritos commonly stuffed with which will not come out when frying, accompanied with salsa, sour cream, & guacamole.
  11. Quesadilla- Tortillas sandwich with caramelized onions, sliced grilled meats, & large quantity of grated cheese, pan fried on both sides, served with sour cream, salsa, guacamole & pico de gallo, filled with Mozzarella cheese.
  12. Tamale- Made by corn or flour tortillas with assorted fillings, gets steamed & then served, you can get everywhere in Mexico.

  13. Mole poblano- Made by using poblano chillies & the sauce flavored with bitter chocolate, popularly combined with chicken or turkey in an ancient Aztec dish.
  14. Helado frito- It’s a fried ice-cream commonly served crispy from outside & cold sliced from inside, dipped with batter of flour & eggs & coated with corn grits flakes.
