Italian cuisine is considered the mother of all western and
European cuisine. It is believed that the art of fine dining originated in
Italy and spread on France with Queen Catherine de’ Medici when she got married
to King Henry II of France. Italy has been the cradles of ancient civilizations
& home to many ancient dynasties & clans. Thus, its culture &
lifestyle as also cuisine has evolved over the years as a result influence of
different communities & regions.
Italian cuisine is the one of the best known outside the country of its origin. Pasta, risotto, fritto misto and pizza or enjoyed worldwide, together with excellence charcutier including mortadella, salumi, Parma ham etc. most of the western food is influenced by Italian cuisine, which was the first fully developed cuisine in Europe. It's pioneers, the ancient Romans, found some of their culinary inspirations as Asian minors and Greece and he also drew on main gradients that were homegrown. Italian cuisine took all most 1,500 years to get suggest that Italian food was all about grilled meat. It were the Romans create Italian cuisine and what we see today is so far more refined version of that food. Emilia-Romagna- Northern Italy creators of Fresh & flat pasta such as Lasagne, Tortellini, Tagliatelle. Integral ingredients are Balsamic Vinegar, from cheese are Parmigiana & cold cuts such as Prosciutto Parma, & bologna sausage.
Liguria- Gastronomic fares ingredients from sea,
kitchen gardens & forests. The famous basil herb grown on Liguria &
Genoa, combining basil with garlic, Parmesan cheese, pine nuts & olive oil
called Pesto Genovese or Ligurian pesto. Minestrone and pesto are
invented on Liguiria.
Lombardy- Mostly covered with Alpine mountains, its
famous for growing rice, its also famous to produce cheese Gorgonzola,
Provolone, Taleggio. Panettone also comes from Lombardy. Here have
some French & German influence on its cuisine & culture.
Piedmont- Its north-western Italy, frequently use of
garlic, fresh raw vegetables, as well as truffle from sauce called Bagna
cauda. Its origin under the name DOP (Denominazione di Origine Protetta). Grissini breadsticks comes from this region.
Puglia- This region also known as Apulia, Italy. It
produces wheat, tomatoes, Zucchini, fennel, endives, varieties of lentils such
as chickpeas, cannellini beans & fava beans. Puglia is the largest producer
of Olive oil, also known for durum wheat pastas.
Sardinia- Sardinia is the second largest island in
Italy after Sicily. It have influenced with various countries such as Greece,
France, & Spain region.
Sicily- Its has influenced with Greeks, Spanish &
Arabs through predominantly Italian. Some famous foods are Tuna, sea bass,
& swordfish along with shellfish. Hot antipasti such as arancine
deep-fried croquettes &cold antipasti, such as Sicilian caponata. Its also
famous for Ricotta cheese & olive oil is very robust.
Tuscany- Its heartland of Italy. Its olives, wheat,
& wine. The famous Minestrone soup from this region.
Umbria- Umbria has very rich cuisine, olives &
herbs are used in abundance, food include beef, pork, veal, baby lamb, game
birds & seafoods such as trout’s & Crabs. Prosciutto & fresh
sausage from this region. Vegetables such as asparagus, chayotes &
courgettes.
Veneto- Veneto is crowning jewel of Venice. Influence
of European salt, spices & goods from Orient. Special rice called carnaroli
& vialone nano is grown in Veneto. Famous cheese named Asiago
comes from here. & Famous Italian dessert tiramisu comes from this
region.
